PM & Vänner was founded in 1992 by two friends, Per Bengtsson and Monica Carlsson
(Vänner is Swedish for “friends” hence the name.) They still owning the company together.
Today PM & Vänner includes PM & Vänner Hotel, PM Restaurant, PM Bistro, PM Bakery,
PM Banquet & Events and a rooftop bar logically named PM Bar.
We are located in the heart of Småland, in the city of Växjö.
Our gastronomic philosophy is based on the three cornestones of forest, lake and meadow.
Thus we like to take advantage of and promote the abundant produce of our region.
Our gastronomic vision is a modern interpretation of the regional cuisine from Småland,
reinvented through the use of new and old techniques and textures.
Since the outset we have worked towards a sustainable society and today we are proud to
be both environmental certified by “Svanen” and “KRAV”.

Internship sommelier in our restaurant
We are also looking for trainees to our sommelier team. To apply you need to be an
educated sommelier and if you have experience from working fine dining it is a plus.

Sustainability is not a separate initiative — it is fully integrated into our daily operations and strategic decisions. Our work covers the entire journey, from the origin of ingredients and how food is produced, to energy use, food waste reduction, employee development and collaboration with the wider community.
Our sustainability efforts are documented, continuously monitored and guided by a cross-functional sustainability group that includes representatives from all departments, company partners and our executive chef.
Our approach is inspired by the region of Småland in southern Sweden — an area historically shaped by limited resources and a strong respect for nature. Locally, this mindset is described by the local traditional word tavarsamhet, meaning to be careful, respectful and resource-conscious.
This heritage encourages us to work thoughtfully with what nature provides, to avoid waste and to create quality through care, creativity and innovation. Many of our ingredients grow slowly in a demanding climate, developing deep flavour and character — something we value greatly in our cuisine.
PM & Vänner is certified by the Nordic Swan Ecolabel, one of the world’s most ambitious environmental certifications. This means we take a comprehensive approach to energy, water, chemicals, waste management and purchasing, supported by clear documentation and regular follow-ups.
We are also KRAV certified, a leading Swedish certification for organic and sustainable food, with annual reviews of our use of organic products.
Sustainability is a natural part of internal training, leadership and everyday decision-making.
We follow clear purchasing principles that prioritise local, organic and small-scale producers whenever possible. Close collaboration with farmers, growers and suppliers allows for high traceability and long-term relationships.
We actively choose organic alternatives and use a significant share of organic, KRAV-certified and MSC-certified products. All fish and seafood served come from sustainable stocks.
Our bakery works almost exclusively with organic ingredients and heritage grains.
PM & Vänner Matsal, our fine dining restaurant, represents the core of our sustainability philosophy. With up to 20 courses, every dish is created with sustainability in mind — from ingredient selection to craftsmanship, materials and partnerships. Each course is based on a local, organic ingredient.
Our cuisine is built around Forest, Meadow and Lake, highlighting ingredients that are often overlooked, such as wild plants, mushrooms and berries from the surrounding landscape. This allows us to innovate while respecting the planet’s limits.
Reducing food waste is a key priority. We measure and analyse food waste systematically and use the insights to improve menus, workflows and skills in our kitchens and production.
Whenever possible, by-products are refined into new products such as preserves, pies or beverages. Remaining materials are returned to circular systems, for example as biofuel or natural fertiliser in cultivation.
When investing in equipment, furnishings or materials, we prioritise energy-efficient and durable solutions. Energy and resource use are continuously monitored as part of our certification requirements.
Textiles, interior elements and consumables are reused or recycled in collaboration with local partners.
A safe, inclusive and inspiring workplace is essential to us. We operate under collective labour agreements, are members of the Swedish hospitality association Visita, and have clear policies for equality and zero tolerance towards harassment.
Many of our employees have long careers with us, reflecting stability and opportunities for growth. Our team includes people of different ages, backgrounds and roles, and ongoing training is provided through internal education, producer visits and external learning.

What is a personal data?
Personal data is any information that can be directly or indirectly related to a person
who is in life. For example: a name, a postal address, phone number, location information, bank details, a photo, an
update in social media, medical information or a computer’s IP address.
Processing of personal data is all that happens with personal data. Any action taken
with personal data is a usage, regardless of whether it is performed automated or not.
Examples of common usages are collection, registration, organization, structuring, storage,

How do we collect, manage and store personal data?
Subscription to newsletters
PM & Vänner sends out newsletters to inform you about what’s happening in the business.
News subscribers report their interests, for example, via the company’s website. The subscriber can at any time, on
your own, terminate the mailing of newsletters through a link in all
newsletter. The e-mail addresses in the newsletter list are not used for any purpose other than just the specific
newsletter.
Please note that all guests who make a reservation at PM & Vänner Hotel are automatically added as subscribers
to the newsletter. These guests have the same opportunity as regular subscribers to unsubscribe
at any time, by the link in the latest newsletter.
Room, banquet, conference, and restaurant
When booking, contact information is required for PM & Vänner to be able to provide the participant
confirmations, information and the right conditions (for example, special diets). If
the participant does not want to leave his consent, reference is made to a contact that can assist in finding a
solution. The collected information is only used for the booking the participant is making / registering.
Image material for marketing purposes
In case it is possible to distinguish people from the pictures, the person has given oral or written consent. The
person has the right to withdraw his consent at any time by contacting PM & Vänner at the above contact details.
In cases where model agreements have been established, the legal basis for an agreement is applicable.
Images are stored in an image bank, to which the company&8217;s advertising
agency also has access to a large part of the pictures – personal data agreements have been established. The agency
has no rights to distribute the images to third parties or use the images in other contexts than PM & Vänners’
marketing.
Third parties
We may share your personal data with third parties offering services to us. An example of such a third party
offering services to us is Oaky B.V. We may use the Oaky services to communicate with you and to offer you
specific services and upgrades that relate to your stay with us. Oaky acts as a data processor of your personal data
on behalf of us, with the purpose of offering the Oaky services to us. We require all third party service providers to
respect the security of your personal data, to treat it in accordance with the law and to process your personal data
only in accordance with our instructions.”*
In our hotel booking system, the data is saved for one year.
For table reservations in our restaurants, we have agreements with FoodFriends AB / Waiteraid. In this case,
FoodFriends AB is our personal information officer.
The subject matter of the personal data processing under this Subscription Agreement is WaiterAid, the booking
system we use for table bookings in the restaurants, provided by FoodFriends AB. The treatment is ongoing and
consists of showing and processing bookings in the restaurant, regarding personal details of type name, phone
number and email as well Details of the booking, such as date, time, number and, if applicable booking comments
with ex. guest wishes and allergies.
In Waiteraid, the data is saved for 18 months. Here is more information about Waiteraid and GDPR:
We require that all third party service providers respect the security of your personal data, process them under the
law and process your personal information only in accordance with our instructions.
Your rights
Personal data processing necessary to complete a contract or fulfill a legal obligation
is permitted without consent. To collect and manage your personal data for any other purpose requires that you
consent to the treatment. You leave consent to handling personal data using the services we provide, see more

You can choose to withdraw your consent at any time by contacting us contact details above. If you revoke your
